buttermilk.

i am so happy with this bottle:
(is it even a bottle?)

i have one in my kitchen that have traveled all the way from nyc :-:--) ... empty though.

in denmark the buttermilk tetra-pack bottles are green/white and has always been.
a yellowish and happy green.

recently i saw a music video about a boy drinking lots of buttermilk. my first and grumpy reaction was.... - yes? but why dont he shake the buttermilk first??

i cant help it.. :-:--)

so

remember to shake your buttermilk well
no matter what.
if the bottle is full; pour the first mouthfull out, then shake.
flat buttermilk is the worst.

and remember to keep it cold. real cold.

here is a way to spend both a lot of buttermilk and almond cookies real fast.
another opt. is to use buttermilk with cornflakes. this is super.


i actually think the colour-person in the thise-dairy-factory got the code on danish buttermilk-green totally wrong. you can probably find the true colour by making a image google search on arla kærnemælk.

the nuts and the egg :-:--)

first a real simple thing i thought of of when re-reading the cake recipe.

:

how good it is to put all kinds of nuts (not saltet) in water and let them stay there some time (minimum a day)

put your nuts-in-water-jar in the fridge

they end up with a taste more like the ones you grab right from a tree.

snack snack snack!
eat fast or change water often

and

THE EGG!

better scrambled eggs (or omelet):

i dont really like scrambled eggs. this however is great to use in the same way

for two (-:

4 eggs
1 spf. japanese soy sause
1 spf. sugar

stir together. cook it a bit more than you normally would do to scrambled eggs, but dont overcook. low heat all the way.
i like to use oliveoil for this - but know that it is strange. use whatever you like.

BUT: if you have a pan like this:
you cook it like this :-) but if you dont its samesame to scramble .... almost.

the cake:

according to the season i eat a brown diet these
days. this cake is no exception

nan na hvass gave me the start for this recipe: a chocolate cake that contains no milk, no butter, no wheat flour!

im happy and you will be to once done baking it!
the trick is almonds :-:--)

CHOCOLATE CAKE:

200 g almonds made into flour
175 g chocolate
6 egg yolks
6 egg whites
150 g sugar
1 dl oil
1 dl orange juice
2 spoons of alcohol (granmanier or the like)
a bit of salt


HOW TO:
crush the almonds into flour in a blender (do not peel skin of)

melt the chocolate (take care it dosent get to warm)

whip the egg whites untill they are completely white and stay in the bowl turned upside down. add in salt.

whip sugar and oil untill it gets all white and creamy,
start adding the egg yolks on by one. keep stirring fast
add in the chocolate, the almond flour, the alcohol and the orange juice.

stirr in 1/3 of the egg white. put in the rest slow and carefully

put baking paper in a form. add in dough.

bake in oven:
first 15 min 190° celsius
then 30-40 min 180° celsius

let the cake cool of a bit before eating

!

PS. this gets real good if you add in a handfull of chopped walnuts. let them spend the night in water before chopping.
